The regional Rospotrebnadzor reminded Sverdlovsk residents about safe storage times for New Year’s salads and prepared dishes.
Rospotrebnadzor officials warned that it is especially dangerous to store salads with mayonnaise and mixed ingredients for long periods.
— Most often after the New Year’s feast prepared salads remain in the refrigerator: Olivier, herring under a fur coat and others. These are perishable products because ingredients with different storage stabilities are mixed together, and mayonnaise accelerates the growth of microbes. Therefore, salads should be stored in the refrigerator at +2…+6°C, the regional Rospotrebnadzor reported.
Sanitary doctors also gave recommended shelf lives. Salads made from raw vegetables or fruits can be kept in the refrigerator for up to 18 hours, and after dressing — no more than 12 hours. The same requirements apply to salads with meat, smoked products, as well as to vinaigrettes and dishes made from cooked vegetables. Salads with canned vegetables or boiled eggs are safe for 6 hours after dressing. Seafood dishes without dressing can be stored for up to 12 hours, salads made from pickled, salted and fermented vegetables — up to 36 hours.
In addition, Rospotrebnadzor specified storage times for hot dishes and confectionery. Boiled seafood, cakes and pastries with custard or cream and fresh berries can be eaten within 6–12 hours. Boiled offal, vegetable casseroles with meat and boiled potatoes can be kept in the refrigerator for up to 18 hours. Cooked and stewed meat, boiled poultry, fried liver, boiled eggs, squid dishes, and boiled beets and carrots may be stored for up to 24 hours. Fried fish, as well as cakes and pastries with buttercream, remain good for up to one and a half days.
Cakes and pastries without cream decoration keep the longest — they can be stored for up to 72 hours. However, if dishes stood on the table at room temperature all night after the feast, they must be discarded, without attempting to save or reuse them.
